The Frozen Halal Buffalo Hind Quarter consists of four main cuts:
Topside is huge lean cut of beef which is rolled and divided into boneless joint. This cut is made from the inner section of the thigh because of which it is very tender and lean. It is often used in making a roasting joint.
Silverside has similar properties to that of the Topside cut. The only difference between the two cuts is that silverside requires slower cooking than compared to Topside. This cut, when cooked at an appropriate temperature, makes delicious corned beef and salt beef.
iii) Thick Flank:
Thick flank, also known as Top Rump, is an incredibly lean cut that makes a good balance between the fat and the meat. It is absolutely ideal for roasting and makes a good inexpensive frying steak if it is thinly sliced.
